So I am just starting out on learning CW. When I get to the point where it is time to work on sending I wondering on which one to use. I can't send with either right now so I might as well learn using my non-dominate hand (left in my case). My thinking is that leaves the door open for future use of my dominate hand concurrently like logging a call sign or something. Any recommendations or advice?

You are right. Some right handed writers learned exactly for that reason left handed sending.

Work with both hands alternately to develop your skill equally. Then, you can use your dominant hand for regular communications and be capable of switching so you can log faster if your contesting.
I started left handed and stuck with it, so I'd be a bit behind trying to follow my own advice, but I'm going to give it a try. I'm relearning Morse Code, and I have to unlearn a lot from the way I was taught when I was initially licensed. It's a much harder process, so if you can start now working with each hand, it may be easier.
My twin sister has an education degree and taught herself to write left handed so she could help left handed students. In typing and office skills classes, she was advised to learn to use a calculator/keypad with each hand. So, start early when the muscle memory is just forming.
